It is a blend of Chardonnay (85%) and Sauvignon (15%). The choice to create Sonata originated from the desire to carry on the way initiated with “Va Pensiero”.
Two internationally known vines that have a unique expression in this terroir and offer an authentic example of elegance.
In Sonata the colour is straw yellow with elegant golden nuances. The fragrance, sweet and delicate, remind one of vanilla and tropical fruit enriched with a bit of toast and mineral. On the palate the flavour is full, warm and smooth; the finish is harmonious and aromatic.

Harvest: by hand at optimum maturity for each variety
Vinification: typical white wine vinification with destemming then soft pressing
Fermentation: in small French oak (like Allier)
Finishing: in barriques (Chardonnay) and tonneax (Sauvignon) for 7-8 months.
Bottling: July. Once bottled the wine rests for about 3 months before being released.
Gastronomic Combination: could be drink throughout the meal, from appetizers to dessert: this wine is excellent served as an aperitif, pairs perfectly with pastas or soups, ideal with white and red meats.
To appreciate this wine best it should to be served at 12°-14°C in large glasses.
Ageing Potential: this wine evolves over 10 years.
